Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper. Cook until browned (4–5 minutes).
- Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until vegetables are translucent (3–4 minutes).
- Sprinkle in flour and stir well. Gradually whisk in chicken broth while deglazing the pot.
- Bring to a boil; add pasta and additional seasoning. Cover and simmer for about 20 minutes until the chicken is fully cooked.
- Stir in heavy cream and spinach; simmer for an additional five minutes.
