  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 3 ½ oz sun-dried tomatoes (chopped)

  • 3 handfuls baby spinach
  • 10 ½ oz dried linguine (cooked)

Instructions

  1. Pat the shrimp dry and season with salt, pepper, and garlic granules.
  2. In a large skillet over medium-low heat, heat olive oil. Sauté minced garlic until fragrant, then add shrimp and cook until pink.
  3. Remove the shrimp with a slotted spoon. Deglaze the pan with cider or stock, then add butter and sauté shallots.
  4. Stir in sun-dried tomatoes, followed by cream. Return shrimp to the pan and simmer gently.
  5. Add spinach until wilted, then combine with cooked linguine. Finish with lemon zest and parsley before serving.
