  • 3 cups cooked, shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 12 small flour tortillas
  • 4 tbsp unsalted butter
  • 2 cups chicken broth
  • 1 cup sour cream
  • Diced green chilies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt butter and sauté diced onion and garlic until fragrant. Add shredded chicken and spices; mix well.
  3. In a saucepan, create a roux with remaining butter and flour. Gradually whisk in chicken broth, then stir in sour cream and green chilies.
  4. Spread some sauce in a baking dish, fill tortillas with chicken mixture, roll them up tightly, and place seam side down in the dish. Pour remaining sauce on top and sprinkle with cheese.
