  • 23 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp sea salt and pepper (adjust to your preference)
  • 1 cup heavy cream
  • 4 oz cream cheese (softened)
  • ¾ cup chicken broth
  • ¾ cup grated parmesan cheese
  • 1 tsp chopped fresh parsley
  • 3 garlic cloves (minced)
  • ½ tsp sea salt
  • ½ tsp pepper
  • ½ cup Italian herb sun-dried tomatoes (excess oil removed)
  • 8 oz sliced mushrooms
  • 3 oz baby spinach
  • ½¾ lb short pasta (use ½ lb pasta for a saucier dish)
  • ¼ cup chopped basil

Instructions

  1. Pat dry the chicken breasts and place them in a lightly oiled crock pot. Season with Italian seasoning, garlic powder, paprika, salt, and pepper.
  2. Layer sliced mushrooms and sun-dried tomatoes over the chicken.
  3. In a bowl, combine heavy cream, cream cheese, and chicken broth until smooth; pour over the chicken and vegetables.
  4. Cover and cook on LOW for 3–4 hours or until the chicken reaches an internal temperature of 165°F.
  5. Shred the cooked chicken and stir in fresh spinach and basil until wilted.
  6. Cook pasta separately according to package instructions; drain and mix with the creamy chicken mixture before serving.
