  • 1 pound ground chicken (or turkey)
  • ½ cup yellow onion (minced)
  • 2 large garlic cloves (minced)
  • 8 ounces whole water chestnuts (diced)
  • 1 tablespoon hoisin sauce
  • 5 tablespoons low-sodium soy sauce
  • 1 head butter lettuce

Instructions

  1. In a small bowl, mix sesame oil, hoisin sauce, rice wine vinegar, soy sauce, lime juice, salt, and pepper to create the sauce.
  2. Heat oil in a non-stick skillet over medium heat. Sauté the mushrooms until softened.
  3. Add ground chicken to the skillet; cook until browned. Mix in onions, garlic, ginger, and chili flakes halfway through cooking.
  4. Stir in sautéed mushrooms and diced water chestnuts; pour in the prepared sauce and simmer for 1-2 minutes.
  5. Assemble by placing two tablespoons of filling into each lettuce leaf. Garnish with green onions and sesame seeds before serving.
