  • 1 English cucumber
  • 1/4 red onion (thinly sliced)
  • Fresh parsley (2 tablespoons)
  • Fresh cilantro (2 tablespoons)
  • Olive oil (1/2 cup)
  • Red wine vinegar (1/4 cup)
  • Lemon juice (to taste)
  • 1 pinch brown sugar
  • 2 pinches salt
  • 2 pinches pepper
  • 1 teaspoon kosher salt
  • 3 cloves garlic (minced)
  • 1 teaspoon brown sugar
  • 1 teaspoon dried basil (or 2 teaspoons fresh, chopped)

Instructions

  1. Cut the tomatoes into wedges and halve them.
  2. Slice the cucumber lengthwise and cut into 1/4-inch slices.
  3. In a bowl, mix the tomatoes with brown sugar, red onion, parsley, cilantro, salt, and pepper.
  4. Whisk olive oil, red wine vinegar, lemon juice, garlic, brown sugar, basil, salt, and pepper in a separate bowl.
  5. Pour the dressing over the tomato mixture and toss gently to combine.
