  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups chopped pecans
  • 1 can (12 oz) evaporated milk
  • 1 1/2 cups sugar
  • 3/4 cup butter
  • 4 egg yolks
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a large baking sheet.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, vegetable oil, eggs, and vanilla; blend until smooth. Gradually stir in boiling water.
  3. Pour the batter into the prepared baking sheet and bake for 20–25 minutes or until a toothpick comes out clean.
  4. For the frosting, combine evaporated milk, sugar, butter, egg yolks, and vanilla in a saucepan over medium heat until thickened. Stir in coconut and pecans.
  5. Once the cake cools slightly, spread frosting on top and roll it into a log shape.
