  • 1 2/3 cups filtered water (350 grams)
  • 4 1/4 cups all-purpose flour (500 grams)
  • 2 teaspoons fine salt (9 grams)

  2. Stir in flour and salt until a shaggy dough forms. Mix by hand until all flour is absorbed.
  3. Cover and let rest for 30-45 minutes.
  4. Lightly flour your countertop and stretch and fold the dough for about 15 seconds before letting it rise for 4-12 hours until doubled in size.
  5. Shape the dough and place it in a proofing vessel for another 45-60 minutes.
  6. Preheat your oven to 450ºF while you prepare your dough for baking.
  7. Bake covered for 30 minutes, then uncovered for an additional 20 minutes until golden brown.
