  • 1 small butternut squash (700-900g), peeled and chopped
  • 2 sweet potatoes (275g), peeled and chopped
  • 1 yellow onion, sliced
  • 3 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk
  • 750 ml vegetable or chicken stock
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1 teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by peeling and chopping the butternut squash and sweet potatoes into small cubes. Slice the onion thinly and peel the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the onion until soft (about 5 minutes), then add garlic for another minute.
  3. Add chopped butternut squash and sweet potatoes to the pot along with your chosen stock. Bring to a boil, then reduce heat to simmer for about 20 minutes until tender.
  4. Remove from heat and blend the soup until smooth using an immersion blender or standard blender.
  5. Return to low heat, stir in coconut milk, spices, salt, and pepper. Heat through for about 5 minutes.
  6. Serve warm with optional toppings like fresh herbs or roasted pumpkin seeds.
