  • 2 1/4 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 cup salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, ground cinnamon, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese until smooth using an electric mixer. Gradually add sugar and flour; mix until incorporated. Add sour cream, vanilla extract, and ground cinnamon; mix well. Incorporate eggs one at a time until just blended.
  4. Pour cheesecake filling over the crust in the pan. Bake in preheated oven for about 50 minutes or until set around the edges but slightly jiggly in the center.
  5. In a medium bowl, toss chopped apples with brown sugar, cinnamon, nutmeg, and lemon juice. Cook mixture in a skillet over medium heat until apples soften slightly.
  6. Once cheesecake has cooled slightly, spread the caramel apple topping evenly over it. Drizzle with caramel sauce before cooling completely in the refrigerator for at least four hours.
  7. In another bowl, beat cold heavy whipping cream with powdered sugar until soft peaks form. Add vanilla extract and cinnamon; mix gently.
  8. Cut into bars and top each piece with homemade whipped cream before serving!
