- 24 ounces cream cheese, room temperature

- 3 tbsp all-purpose flour
- 3/4 cup sour cream, room temperature
- 1 1/2 tbsp vanilla extract
- 1 tsp ground cinnamon
- 3 large eggs, room temperature
- 2 large apples, chopped
- 1/4 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/8 tsp ground nutmeg
- sprinkle of lemon juice
- 1/2 cup caramel sauce
- 1/2 cup heavy whipping cream, cold
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, combine graham cracker crumbs, sugar, ground cinnamon, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese until smooth using an electric mixer. Gradually add sugar and flour; mix until incorporated. Add sour cream, vanilla extract, and ground cinnamon; mix well. Incorporate eggs one at a time until just blended.
- Pour cheesecake filling over the crust in the pan. Bake in preheated oven for about 50 minutes or until set around the edges but slightly jiggly in the center.
- In a medium bowl, toss chopped apples with brown sugar, cinnamon, nutmeg, and lemon juice. Cook mixture in a skillet over medium heat until apples soften slightly.
- Once cheesecake has cooled slightly, spread the caramel apple topping evenly over it. Drizzle with caramel sauce before cooling completely in the refrigerator for at least four hours.
- In another bowl, beat cold heavy whipping cream with powdered sugar until soft peaks form. Add vanilla extract and cinnamon; mix gently.
- Cut into bars and top each piece with homemade whipped cream before serving!
