  • 3 pounds Russet or Yukon Gold potatoes
  • 2 cups freshly grated cheddar cheese
  • 1 cup freshly grated parmesan cheese
  • 2 cups heavy cream
  • 3 cloves garlic (minced)
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. Peel and slice the potatoes into 1/8-inch rounds using a mandoline slicer.
  3. In a small saucepan over medium heat, melt the butter, add minced garlic, and cook for about 30 seconds. Stir in heavy cream, salt, and pepper; warm until just boiling.
  4. In a greased 9×13 baking dish, layer half of the potato slices, top with half of the cream mixture and half of each cheese. Repeat layers and finish with remaining cheese on top.
  5. Cover with foil and bake for 40 minutes; remove foil and bake an additional 25-35 minutes until tender.
