- 1/4 cup panko breadcrumbs
- 1 large egg (beaten)
- 2 teaspoons ketchup
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1 tablespoon extra-virgin olive oil (for the skillet)
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 1/2 cups beef stock
- 1 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 6 ounces sliced cremini mushrooms
- Salt and pepper (to taste)

Instructions
- In a large bowl, mix ground beef, panko, egg, ketchup, mustard, oregano, and salt until combined. Shape into four oval patties.
- Heat olive oil in a nonstick skillet over medium-high heat. Cook patties for about 3 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, melt butter and whisk in flour until smooth. Gradually add beef stock while whisking to avoid lumps.
- Stir in ketchup, Worcestershire sauce, onion powder, and mushrooms; simmer for 5 minutes until thickened.
- Return patties to the skillet; cover and cook for another 10 minutes or until fully cooked (160°F internal temperature).
