  • 18 corn tortillas
  • 1 15 oz. can black beans (drained and rinsed)
  • 1 4 oz. can green chilis
  • 1 14.5 oz. can fire-roasted diced tomatoes (undrained)
  • 1/4 cup taco seasoning
  • 2 tsp minced garlic
  • 1 medium yellow onion (diced)
  • 1/2 cup water
  • 6 cups shredded cheese (blend of Monterey jack and cheddar)
  • 1 medium tomato (diced for garnish)
  • 1 bunch green onions (sliced for garnish)
  • sour cream (for serving)

Instructions

  1. Preheat your oven to 350°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Add minced garlic and taco seasoning mixed with water; simmer.
  3. Stir in fire-roasted tomatoes, green chilis, and black beans until heated.
  4. Layer six corn tortillas in the baking dish, followed by one-third of the meat mixture and two cups of shredded cheese. Repeat layers twice more, finishing with cheese.
  5. Cover with aluminum foil and bake for 30–40 minutes or until bubbly.
  6. Garnish with diced tomatoes and green onions before serving.
