  • 6 cups chopped, peeled sweet potato
  • 1 quart vegetable broth
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • 1/3 cup canned, unsweetened coconut milk (or heavy cream)
  • 1 tsp salt (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent, then add chipotle pepper, garlic powder, pumpkin pie spice, and salt.
  2. Stir in pumpkin puree and sweet potatoes. Pour vegetable broth to cover.
