- 14–15 oz canned salmon (well drained)
- 1 medium yellow onion (finely diced)
- 1/2 red bell pepper (diced)
- 1/2 cup Panko bread crumbs
- 1 large egg (lightly beaten)
- 2 Tbsp mayonnaise
- 2 Tbsp olive oil
- Fresh parsley (minced)
Instructions
- Heat 1 Tbsp olive oil and 1 Tbsp butter in a skillet over medium heat. Add the diced onion and bell pepper, sauté until golden brown (about 7-9 minutes). Remove from heat.
- In a mixing bowl, combine flaked salmon, sautéed veggies, Panko bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and parsley. Mix well and form into patties about 2 inches wide.
- In the same skillet, heat remaining olive oil and butter over medium heat. Cook patties for 3–4 minutes on each side until golden brown.
