  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/3 cup water
  • 2 teaspoons sesame oil
  • Vegetable oil for frying

Instructions

  1. In a bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, water, and sesame oil to prepare the sauce.
  2. In another bowl, mix cornstarch, flour, egg whites, and cold seltzer water to create the batter. Coat chicken pieces evenly.
  3. Heat vegetable oil in a pot to 350°F (175°C). Fry battered chicken pieces until golden brown and crispy.
  4. In a wok or skillet, heat sesame oil over medium heat. Add garlic and crushed red pepper; sauté briefly.
  5. Pour the prepared sauce into the pan and quickly add fried chicken. Toss until well-coated.
  6. Serve hot with additional sesame seeds if desired.
