  • 1 large onion, diced
  • 1 celery rib, sliced
  • 34 garlic cloves, minced
  • 4 cups vegetable stock
  • 1 large yellow potato, grated
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • 1 (19-ounce) can white beans, drained and rinsed
  • 1012 ounces spinach, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large stockpot over medium heat.
  2. Sauté the onion and celery for about 5 minutes until translucent.
  3. Add garlic; cook for another minute.
  4. Pour in vegetable stock and add potato, bay leaf, and thyme. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add white beans; simmer for an additional 5 minutes.
  7. Stir in spinach; cook until wilted (about 1 minute).
  8. Remove from heat; add lemon juice and season with salt and pepper.
