  • 3 large eggs
  • ¼ teaspoon kosher salt
  • ¼ teaspoon white pepper
  • 3 tablespoons butter
  • 2 slices of bread
  • 1 slice cheddar cheese
  • 2 slices deli ham

Instructions

  1. In a medium bowl, whisk together eggs, salt, and pepper until blended.
  2. Melt 2 tablespoons of butter in a non-stick skillet over medium heat.
  3. Butter one side of each slice of bread with the remaining tablespoon of butter; set aside.
  4. Add the egg mixture to the skillet, swirling to spread evenly.
  5. Place both slices of bread on top of the eggs, butter side up.
  6. Cook undisturbed until eggs are set (5-7 minutes).
  7. Carefully flip the sandwich over using a spatula.
  8. Add cheese and ham on one slice; fold any excess egg over the ham.
  9. Complete the sandwich by folding over the other slice of bread.
  10. Flip again and cook for an additional 2-3 minutes or until cheese melts and both sides are golden brown.
