  • 2 tbsp vegetable oil
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 800 g boiled and cooled long-grain rice
  • 1/2 tbsp sesame oil
  • 2 eggs
  • 2 tbsp dark soy sauce
  • 1/4 tsp salt
  • 1/4 tsp garlic salt
  • 1 tbsp lemon juice
  • 1/2 bunch spring onions (chopped)

Instructions

  1. Heat 1 tbsp vegetable oil in a large wok over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).
  2. Stir in the remaining vegetable oil and minced garlic; cook for an additional 30 seconds.
  3. Add the boiled rice to the wok, raise the heat to high, and drizzle with sesame oil.
  4. Toss everything together continuously to warm evenly.
  5. Push rice to one side of the pan; crack in two eggs and drizzle with soy sauce.
  6. Scramble the eggs until slightly runny, then mix thoroughly into the rice.
  7. Season with remaining soy sauce, salt, garlic salt, and stir well.
  8. Add lemon juice, adjust seasoning if needed, then serve topped with chopped spring onions.
