Ingredients
- 1 cup uncooked quinoa
- 2 cups water
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 medium cucumber, chopped
- 1 medium red bell pepper, chopped
- ¾ cup chopped red onion
- 1 cup finely chopped flat-leaf parsley
- ¼ cup olive oil
- ¼ cup lemon juice
- 1 tablespoon red wine vinegar
- 2 cloves garlic, pressed or minced
- ½ teaspoon fine sea salt
- Freshly ground black pepper, to taste
Instructions
- Cook quinoa by combining rinsed quinoa and water in a medium saucepan. Bring to boil; reduce heat to simmer until water is absorbed (about 15 minutes). Let sit covered for 5 minutes.
- In a large bowl, combine chickpeas, cucumber, bell pepper, onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, vinegar, garlic, salt.
- Once quinoa has cooled slightly, add it to the vegetable mixture. Pour dressing over the top and toss gently until combined.
- Let rest for 5-10 minutes before serving.
