Description

  • 1 (15 oz) can chickpeas, drained & rinsed
  • ½ cup feta cheese, crumbled
  • ⅓ cup dried cranberries
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • For the Lemon Vinaigrette: ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup)
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine chickpeas, feta cheese, cranberries, red onion, and parsley.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey/maple syrup, garlic, salt, and black pepper.
  3. Pour the vinaigrette over the salad mixture and toss until well coated.
  4. Serve immediately or refrigerate for 15-20 minutes to enhance flavors.
