  • 2 cups baby spinach
  • 1/4 red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions
