Ingredients
- 2½ cups uncooked rotini pasta
- 1 cup sour cream
- 1 cup salsa
- 1 packet mild taco seasoning
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- 1 can (15 oz) corn (drained)
- 1 can (15 oz) black beans (drained & rinsed)
- 2½ cups cooked chicken
- 2 cups shredded cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish.
- Cook the rotini pasta according to package instructions until al dente; drain.
- In a large bowl, mix together sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder until smooth.
- Combine the cooked pasta with the sauce mixture. Add corn, black beans, chicken, and 1 cup of cheese; mix well.
- Transfer the mixture to the prepared baking dish and sprinkle with remaining cheese. Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 5 minutes until bubbly. Serve hot!
