  • 1 ½ lbs boneless skinless chicken breast or thighs
  • 3 eggs (whisked)
  • ¾ cup cornstarch
  • ¾ cup buffalo sauce
  • 1 cup packed light brown sugar
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon melted butter
  • Salt
  • Pepper
  • Garlic powder
  • Chili powder (optional)
  • Mustard powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut chicken into bite-sized pieces, pat dry, and season with salt and pepper.
  3. In a medium bowl, whisk eggs until frothy. Coat chicken in eggs.
  4. Heat vegetable oil in a frying pan to 365°F (185°C). Coat chicken pieces in cornstarch followed by egg before frying.
  5. Fry chicken in batches for about 3–4 minutes per side until golden brown.
  6. Drain on wire racks and toss with Firecracker sauce in a large bowl.
  7. Bake for 10 minutes, toss again with sauce, then bake for an additional 10 minutes.
  8. Serve hot over rice or vegetable fried rice.
