- 3 eggs (whisked)
- ¾ cup cornstarch
- ¾ cup buffalo sauce
- 1 cup packed light brown sugar
- 2 teaspoons apple cider vinegar
- 1 tablespoon melted butter
- Salt
- Pepper
- Garlic powder
- Chili powder (optional)
- Mustard powder
Instructions
- Preheat your oven to 350°F (175°C).
- Cut chicken into bite-sized pieces, pat dry, and season with salt and pepper.
- In a medium bowl, whisk eggs until frothy. Coat chicken in eggs.
- Heat vegetable oil in a frying pan to 365°F (185°C). Coat chicken pieces in cornstarch followed by egg before frying.
- Fry chicken in batches for about 3–4 minutes per side until golden brown.
- Drain on wire racks and toss with Firecracker sauce in a large bowl.
- Bake for 10 minutes, toss again with sauce, then bake for an additional 10 minutes.
- Serve hot over rice or vegetable fried rice.
