- 1/2 cup butter (room temperature)
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/4 cup milk
- 2 3/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 ounces red gelatin powder (cherry or strawberry)
- 3 ounces blue gelatin powder (berry)
- For frosting: 1 cup butter, 5 cups confectioners' sugar, food coloring
Instructions
- Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
- In a mixing bowl, cream together butter and sugar until fluffy. Add vanilla and eggs one at a time, mixing well after each.
- Gradually add milk while mixing. In another bowl, whisk flour, baking powder, and salt; combine with wet ingredients until just mixed.
- Divide batter into three bowls; color one with red gelatin powder, leave one plain for the white layer, and color the last with blue gelatin powder.
- Layer the batters into muffin tins: start with red on the bottom, followed by white, then blue on top.
- Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
