Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (softened)
- 3/4 cup brown sugar
- 1/3 cup white sugar
- 1 1/2 cups smooth peanut butter
- 1 large egg
- 1 large egg yolk
- 7 oz jar marshmallow fluff
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by lining it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together softened butter, brown sugar, and white sugar until smooth. Mix in peanut butter followed by the egg and egg yolk.
- Gradually combine the dry ingredients into the wet mixture until just mixed.
- Reserve about 1 cup of batter, then press the remaining dough into the prepared pan evenly.
- Bake for about 25 minutes until set. Remove from the oven and spread marshmallow fluff over the top.
- Pinch off pieces of reserved dough and place them on top of the marshmallow (about 80% coverage).
- Bake again for an additional 10 minutes until set. Let cool completely before slicing.
