Description

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cups smooth peanut butter
  • 1 large egg
  • 1 large egg yolk (in addition to the other egg, discard the white)
  • 7 oz jar marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter with brown and white sugars until fluffy. Add peanut butter and eggs; mix until smooth.
  4. Gradually incorporate dry ingredients into the peanut butter mixture until just combined.
  5. Reserve 1 cup of batter and press the remaining into the bottom of the prepared pan.
  6. Bake for 25 minutes until set; then spread marshmallow fluff over the warm base.
  7. Pinch off pieces of reserved dough and scatter on top of marshmallow fluff.
  8. Bake again for 10 minutes; cool completely before slicing.
