- 1/4 cup roasted red bell peppers
- 1 teaspoon chopped Calabrian chili peppers
- 2 cups baby spinach
- 6 English muffins
- 6 slices sharp cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and line a quarter sheet pan with parchment paper.
- In a high-powered blender, combine eggs, cottage cheese, egg whites, salt, black pepper, onion powder, and garlic powder; blend until smooth.
- Add roasted red bell peppers, chopped Calabrian chili peppers, and baby spinach; blend until veggies are roughly chopped.
- Pour the mixture onto the lined sheet pan; bake for 20-25 minutes or until set.
- While baking, split English muffins in half and toast in the oven until golden brown.
- Once baked, use a biscuit cutter to create egg portions that fit snugly on muffins.
- Assemble by placing an egg portion on the bottom half of each muffin, topping with cheddar cheese before adding the top half of the muffin.
