- 6 cups fresh cherries, pitted

- 1/2 cup granulated sugar
- 1 cup (2 sticks) unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg (for egg wash)
- 1 tablespoon water
- 1 tablespoon granulated sugar
Instructions
- Prepare the cherry filling by simmering pitted cherries with lemon juice, vanilla, sugar, cornstarch, and salt until thickened. Allow to cool.
- Preheat the oven to 425°F (220°C) and butter a pie plate.
- Combine flour and sugar in a bowl; cut in cold butter until crumbly. Add cold water and knead gently into two balls.
- Chill dough for at least 30 minutes.
- Roll out dough into discs; place one disc in the pie plate and fill with cooled cherry mixture.
- Cover with second rolled disc; seal edges and brush with egg wash mixed with water.
- Bake for approximately 60 minutes until golden brown.
