  • 1 cup buttermilk
  • 1 large egg

  • 1/4 cup chopped scallions (optional)

  4. Heat oil in a cast-iron skillet to about 350°F.
  5. Drop heaping tablespoonfuls of batter into the hot oil and flatten slightly. Fry each side for about 2–3 minutes until golden brown.
  6. Transfer cooked fritters to paper towels to drain excess oil.
