  • 16 oz semisweet chocolate chips
  • 4 large eggs
  • 1 1/4 cups granulated sugar
  • 3 tablespoons light olive oil
  • 1 tablespoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan with butter and parchment paper.
  2. In a medium saucepan over low heat, melt the butter and 2 cups of chocolate chips until smooth. Allow to cool for about 15 minutes.
  3. In a large bowl, whisk together eggs, sugar, coffee granules, oil, and vanilla until well combined.
  4. Stir the cooled chocolate mixture into the egg mixture until smooth.
  5. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. Gently fold the dry ingredients into the wet ingredients just until combined.
  7. Pour the batter into the prepared pan and sprinkle remaining chocolate chips on top. Bake for 35–40 minutes based on desired doneness.
  8. Cool before cutting into bars.
