  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir in vanilla.
  3. Whisk the eggs with caster and Demerara sugars until fluffy.
  4. Sift flour, cocoa powder, baking powder, and salt together; add chocolate chips.
  5. Gently fold melted chocolate mixture into whipped eggs, then fold in dry ingredients until just combined.
  6. Scoop batter onto the prepared tray; bake for 12-14 minutes until set.
  7. Cool slightly before transferring to a wire rack.
