  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook the rigatoni in salted boiling water until al dente. Reserve ½ cup of pasta water and drain.
  2. In a skillet, heat olive oil over medium-high heat. Sear chicken pieces until golden brown; set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth and simmer briefly.
  4. Stir in heavy cream and simmer until slightly thickened. Mix in Parmesan cheese until smooth.
  5. Return chicken to the skillet, add rigatoni, and toss to coat in the sauce.
  6. Serve garnished with parsley and extra Parmesan.
