Description

This easy German potato salad is a warm and inviting side dish that effortlessly blends tender red potatoes with crispy bacon, all enveloped in a tangy honey Dijon vinaigrette.

Ingredients

Scale
  • 2 pounds baby red potatoes
  • 8 slices bacon
  • 1 small yellow onion
  • 3 garlic cloves
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • ⅓ cup apple cider vinegar
  • Kosher salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Potatoes: Boil potatoes in salted water until fork-tender (about 10-15 minutes). Drain, let cool slightly, and cut into chunks.
  2. Fry the Bacon: In a skillet, cook bacon pieces until crispy. Remove and drain on paper towels.
  3. Sauté Onion and Garlic: In the same skillet, sauté diced onion until softened, then add minced garlic until fragrant.
  4. Whisk Dressing: Combine honey, Dijon mustard, salt, pepper, and apple cider vinegar in the skillet and stir until slightly reduced.
  5. Toss Together: Mix the dressing with potatoes and bacon gently to coat without mashing.
  6. Garnish: Serve warm, garnished with chopped parsley.
