- 5 Tbsp olive oil (divided)
- 14 oz baby bella mushrooms (divided)
- 1/2 cup white onion (diced)
- 1 Tbsp dried parsley
- 2 cloves garlic (minced)
- 3/4 tsp dried thyme
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 cups gouda cheese (shredded, divided)
- 4 boneless, skinless chicken breasts
Instructions
- Preheat oven to 400°F (200°C).
- Chop 10 oz of baby bella mushrooms and slice the remaining 4 oz.
- Slice pockets into each chicken breast; pound lightly for even thickness.
- In a skillet, heat 2 Tbsp olive oil, sauté chopped mushrooms for 5 minutes.
- Add onions and seasonings; cook until translucent.
- Mix sautéed ingredients with 1 cup gouda cheese.
- Briefly brown stuffed chicken in skillet on both sides.
- Generously stuff each chicken breast with the mushroom-cheese mixture and place them in a baking dish.
- Bake for approximately 50 minutes until cooked through.
- Top with remaining gouda and sliced mushrooms; bake an additional 7–10 minutes.
