- ⅓ cup almond flour

- 2 tsp dried oregano
- 1 tsp ground cumin

- Zest of 1 lemon
- 1 tbsp extra virgin olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice of 1 lemon
- 1 tbsp extra virgin olive oil
- ⅓ cup crumbled feta cheese
- Fresh parsley (chopped, for garnish)
- Salt to taste
Instructions
- In a bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix until well combined.
- Form the mixture into meatballs (1½-2 inches in diameter) and sprinkle with salt.
- Heat olive oil in a skillet over medium heat; sear meatballs for about 3-4 minutes until browned on all sides. Cover and cook for another 5-6 minutes until fully cooked through.
- In the same skillet, bring chicken broth to a boil. Add orzo and cook for about 8-10 minutes until tender.
- Stir in lemon juice and olive oil into the cooked orzo.
