  • 4 cups cooked white rice
  • 8 ounces canned green chilis
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley or cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, green chilis, 1½ cups of shredded cheese, sour cream, garlic powder, salt, and pepper. Mix until well combined.
  3. Spray a 9" x 13" baking dish with nonstick cooking spray and spread the rice mixture evenly in the dish. Top with the remaining cheese.
  4. Bake for approximately 20 minutes until bubbly and lightly golden on top.
  5. Allow to cool for about 10 minutes before garnishing with parsley or cilantro.
