  • 2 USDA Prime Dry-Aged Bone-In Rib Steaks (16 oz. each)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 shallot (chopped)
  • 6 cloves garlic (minced)
  • 1/4 cup rosemary (chopped)
  • 1/4 cup parsley (chopped)
  • 1/4 cup tarragon (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mint (chopped)
  • Juice of 2 lemons
  • 1/4 tsp smoked paprika
  • 2 tsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Pat the steaks dry and season with salt and pepper; let sit.
  2. Preheat the grill until charcoal briquettes are hot.
  3. In a pan over medium heat, melt butter and olive oil; sauté shallots and garlic until translucent.
  4. Remove from heat and stir in fresh herbs, lemon juice, smoked paprika, salt, and pepper to create the herb sauce.
  5. Place steaks on direct heat to sear for 4 minutes per side; then move to indirect heat until reaching an internal temperature of 135°F (medium).
  6. Let rest for 10 minutes before slicing against the grain and serving with the herb sauce.
