  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a mixing bowl, combine almond flour, peanut butter, salt (if needed), maple syrup, and vanilla until well blended.
  2. Roll the mixture into small balls and place them on a baking tray. Refrigerate for about 30 minutes to firm up.
  3. Meanwhile, melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second increments until smooth.
  4. Dip each chilled ball into the melted chocolate using a fork, coating two-thirds of it before placing it back on the tray.
  5. Chill dipped buckeyes in the fridge for at least 15 minutes before serving.
