  • 24 oz salmon (cut into 4 portions)
  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp olive oil
  • 2 cloves garlic
  • 2 cups spinach (fresh & chopped)
  • 1 cup cherry tomatoes (sliced in half)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup parmesan cheese (freshly grated)
  • Salt and black pepper to taste
  • Pasta (1 serving Barilla protein+)

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Cut the salmon into four equal portions.
  3. In a small bowl, mix the milk and cornstarch until smooth.
  4. Heat olive oil and butter in the pan; add garlic and sauté until fragrant.
  5. Add the spinach, cherry tomatoes, and sun-dried tomatoes; cook until softened.
  6. Pour in the milk mixture and stir until slightly thickened.
  7. Add salmon portions to the pan, cooking until they flake easily.
  8. Toss with cooked pasta and garnish with parmesan cheese.
