  • 1 large green bell pepper, chopped
  • 1/2 cup sliced olives
  • 4 oz turkey pepperoni or chickpeas (for vegetarian option)
  • 4 oz mini mozzarella cheese balls
  • Dressing: olive oil, red wine vinegar, dijon mustard, Italian seasoning

Instructions

  1. Boil pasta according to package directions; reserve 3 tbsp pasta water before draining.
  2. In a small bowl or mason jar, mix dressing ingredients including reserved water until combined.
  3. In a large bowl, combine the cooked pasta with cherry tomatoes, roasted red pepper, green bell pepper, olives, turkey pepperoni (or chickpeas), and mozzarella.
  4. Pour dressing over the salad and mix well to coat all ingredients evenly.
