- 1 Cup Canned Pumpkin
- 1 Cup Coconut Sugar
- 1/2 Cup Coconut Oil
- 1 Egg
- 1 tbsp Vanilla Extract
- 2 Cups White Whole Wheat Flour
- 2 tsp Baking Powder
- 1 Tsp Ground Cinnamon
- 1/2 Tsp Pumpkin Pie Spice
- 1/2 Tsp Fine Sea Salt
- 1 1/2 Cups Chocolate Chips
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together canned pumpkin, coconut sugar, coconut oil, vanilla extract, and egg until smooth.
- In another bowl, combine white whole wheat flour, baking powder, ground cinnamon, pumpkin pie spice, and fine sea salt.
- Gradually add the dry mixture to the wet mixture and stir until just combined. Fold in the chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet about two inches apart. Optionally, place extra chocolate chips on top.
- Bake for 10-11 minutes or until a toothpick comes out clean. Let cool before serving.
