Ingredients

  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • ½ cup pumpkin puree
  • 2 large eggs
  • ⅓ cup pure maple syrup
  • ½ cup melted coconut oil
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350ºF and line an 8×8 baking pan with parchment paper.
  2. In a large mixing bowl, whisk together eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  3. Fold in oat flour, rolled oats, pumpkin pie spice, and baking soda until just combined.
  4. Gently mix in chocolate chips.
  5. Pour batter into the prepared pan and sprinkle extra chocolate chips on top if desired.
  6. Bake for 24–26 minutes or until a toothpick comes out clean.
