  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)

Instructions

  1. Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Add oil to the pan and sear the chicken for 3–4 minutes on each side until golden brown. Remove from pan.
  3. In the same pan, toast uncooked rice for 1–2 minutes while stirring frequently.
  4. Pour in the chicken broth and stir in BBQ sauce and honey until combined.
  5. Return seared chicken to the pan, nestling it into the rice mixture.
  6. Bring to a gentle boil, reduce heat to low, cover, and simmer for 15 minutes.
  7. Sprinkle mixed vegetables over the rice, cover again, and cook for an additional 5 minutes until rice is tender and chicken reaches internal temperature of 165°F (74°C).
  8. Remove from heat and let sit for 5 minutes before fluffing the rice.
