Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter (melted)
  • 4 packages (8 oz each) cream cheese (softened)
  • 1 cup granulated sugar (for filling)
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 tsp ground cinnamon
  • 1 cup honey bun or cinnamon roll icing
  • Optional: crushed honey bun pieces and caramel sauce for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  3. Beat softened cream cheese until smooth. Gradually add 1 cup sugar; mix until combined. Add vanilla, then eggs one at a time, mixing after each addition. Stir in ground cinnamon.
  4. Pour filling over the crust and spread evenly. Bake for 60–70 minutes until edges are golden and center is slightly jiggly.
  5. Turn off the oven; leave cheesecake inside with door ajar for an hour to cool.
  6. Chill in the refrigerator for at least 4 hours or overnight.
  7. Top with icing, optional crushed pieces, and caramel drizzle before serving.
