  • 2 bay leaves
  • 1 cup small pasta (ditalini, orzo, or small shells)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Stir in garlic; cook until fragrant.
  3. Pour in chicken broth; nestle the chicken breast into the pot with bay leaves and herbs. Bring to a boil then reduce to simmer.
  4. Cook for 25–30 minutes until the chicken is tender. Remove and shred the meat; return it to the soup.
  5. Add pasta and cook until al dente.
