Ingredients

  • 3 Tbsp olive oil
  • 3 large carrots, peeled and chopped
  • 1 yellow onion, quartered
  • 5 cloves garlic, peeled
  • 3 ribs celery, halved
  • 1 tsp salt
  • Black pepper to taste
  • Parmesan rind (optional)
  • 8 cups chicken or vegetable broth
  • 1 ½ cups pastina (or other small pasta)
  • Juice of 1 lemon
  • Freshly grated parmesan for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add chopped vegetables, salt, and pepper. Sauté for about 4–5 minutes until slightly browned.
  2. Pour in the broth and add the parmesan rind. Bring to a gentle boil, then reduce heat and simmer covered for 25–30 minutes until veggies are very soft.
  3. Remove the parmesan rind and blend the soup until smooth using an immersion blender or regular blender.
  4. Stir in pastina and cook for an additional 8–10 minutes until al dente.
  5. Add lemon juice and adjust seasonings as needed.
  6. Serve hot with freshly grated parmesan on top.
