Ingredients

Scale
  • 2 Tablespoons minced jalapeno
  • 2 cups roughly chopped cilantro
  • 1 Teaspoon ground cumin
  • 1 Teaspoon sea salt
  • 2 Tablespoons freshly squeezed lime juice (from 1 lime)
  • 1 clove garlic (minced)
  • 2 Tablespoons olive oil
  • 4 boneless, skinless chicken breasts (1½2 pounds)

Instructions

  1. In a food processor, combine jalapeno, cilantro, cumin, sea salt, lime juice, garlic, and olive oil. Blend until smooth.
  2. Reserve ¼ cup of the marinade in the refrigerator for later use. Pour the remaining marinade over the chicken breasts in a mixing bowl and toss to coat evenly. Cover and refrigerate for at least one hour.
  3. Preheat your grill to medium heat (350º-400ºF). Grill marinated chicken for about 8 minutes per side or until cooked through (internal temperature reaches 165ºF).
  4. Brush grilled chicken with reserved marinade before serving.
