Ingredients
- 4 large baking potatoes
- 9 oz cooked and chopped bacon
- 5.3 oz grated cheddar cheese
- 5.3 oz cream cheese
- 3 fresh jalapeños, deseeded and finely diced
- 2 tbsp butter
- Garlic powder, to taste
- Olive oil, to taste
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat oven to 356°F (180°C).
- Prick potatoes with a fork, coat with olive oil, and season with salt and pepper. Bake for 60–70 minutes until tender.
- Allow to cool slightly, then slice off the tops and scoop out most of the flesh.
- In a bowl, mix the scooped potato with cream cheese, garlic powder, butter, bacon, cheddar, jalapeños (reserve some for topping), salt, and pepper until creamy.
- Fill potato skins with the mixture and top with remaining cheese and jalapeños.
- Bake again at 430°F (220°C) for about 15 minutes until bubbly.
