  • 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
  • 1 lb Korean sweet potato noodles (glass noodles / dangmyeon)
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tablespoons sesame oil
  • 1 tablespoon olive oil
  • 6 tablespoons soy sauce
  • 3 tablespoons brown sugar

Instructions

  1. Cook the noodles in boiling water with olive oil for 5–6 minutes until chewy. Drain and set aside.
  2. In a skillet over high heat, cook the beef until browned. Season with half of the soy sauce, sesame oil, and brown sugar. Set aside.
  3. Sauté carrots and onion in another skillet with olive oil until softened. Stir in remaining sauces and garlic; cook until fragrant.
  4. Add spinach and cook until wilted.
  5. Combine noodles, beef mixture, and sautéed vegetables in a large bowl; toss well to coat.
  6. Serve warm with additional green onions as garnish if desired.
